The Viceroy Santa Monica launched new restaurant CAST in the former Whist space.
As of July 11, CAST is the newly beautified occupant of the former Whist space inside the elegant Viceroy Santa Monica. Designed to “cast a wider net,” the hotel relaunched its signature restaurant to incorporate international and local flavors into both small and large plates. In keeping with this global-meets-local feel, the layout now incorporates both communal and private dining elements.
Chef Tony DiSalvo’s menu also aspires to combine the familiar and new by merging market-fresh and international ingredients into unexpected dishes. Start with an order of buttermilk biscuits with herb lardo and housemade seasonal jam; or grilled beef short rib skewers in Vietnamese flavors, served alongside crispy shallots and rice. Small plates of note include potato gnocchi with asparagus and morels, or the more adventurous Chinese-spice fried quail with lime-soy-chile dipping sauce.
