Chef Pascal Olhats is keeping Tradition—his legendary French bistro, that is—alive with a new pop-up restaurant in its honor at Brasserie Pascal. After 24 years, Olhats closed Tradition in February, but is bringing its spirit back at Brasserie’s bar lounge with "The Tradition Room," starting today. A prix-fixe menu of two to four courses (priced at $45, $55, and $65, respectively; five-course price, TBD) features Traditional-inspired eats including chilled champagne poached oysters, thyme-crusted sea bass, and Dijon-crusted rack of lamb. Wine pairings are available for an additional $10 per course price, and guests will drink and dine amongst fine art renderings of Olhats himself.

Closed off from the rest of the restaurant, the exclusive area will seat just 25 and doesn’t accept parties larger than six.
