INSPIRATION:
The beautiful green hue of this cocktail is reminiscent of the awe-inspiring light and color in the south of France. One might imagine sitting by the waters edge at a cafe in Saint Tropez in the late summer, watching the sunset over the colorful boats in the bay. This refreshing cocktail would be perfectly thirst-quenching and appropriate for such a night in the French Riviera.
Verite
1 oz. Cointreau
1 oz. Beefeater 24 Gin
3/4 oz. fresh lemon juice
1 oz. mint paste (mint and sugar pesto)
Garnish: Large mint sprig (bouquet) and a metal straw (optional)
Combine ingredients in a mixing glass. Press the mint paste into the spirits and juice. Shake hard.
